Corn and Potato Chowder

A creamy, comforting chowder with sweet corn and hearty potatoes that is great for cold nights.

Ingredients:

  • 1 cup corn kernels
  • 2 cups diced potatoes
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In a large pot, melt butter over medium heat

Add onion, celery, and garlic

Saut until softened

Stir in flour to create a roux, cooking for 2 minutes

Gradually whisk in vegetable broth to avoid lumps

Add potatoes, corn, thyme, paprika, salt, and pepper

Simmer until potatoes are tender

Pour in milk, stirring continuously until chowder thickens

Adjust seasoning to taste

Serve hot, garnished with fresh parsley
