Ingredients:

  • 1 cup dates, pitted
  • 1/4 cup natural peanut butter
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 2 ripe bananas, frozen
  • 1/4 cup coconut cream
  • 1/4 cup maple syrup
  • 1/2 cup rolled oats
  • 1/4 cup almonds
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 tbsp shredded coconut, for garnish
  • Fresh berries, for garnish

Instructions:

In a food processor, blend dates, peanut butter, almond milk, vanilla extract, and a pinch of sea salt until smooth

This is your peanut butter caramel sauce

In a blender, blend frozen bananas, coconut cream, and maple syrup until creamy

This is your vegan ice cream

In a food processor, pulse rolled oats, almonds, cinnamon, vanilla extract, and sea salt until crumbly

This is your raw vanilla cake crumble

To assemble, layer vegan ice cream with peanut butter caramel sauce in serving bowls

Sprinkle raw vanilla cake crumble on top

Garnish with shredded coconut and fresh berries
