These vegan cookies combine the creaminess of avocado with the sweetness of white chocolate chips for a delicious treat. They are soft, chewy, and perfect for satisfying your sweet cravings while being dairy-free and egg-free.
Ingredients:
- 1 ripe avocado, mashed
- 1/2 cup coconut sugar
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup vegan white chocolate chips
Instructions:
Preheat oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine mashed avocado and coconut sugar until well combined
Add almond milk and vanilla extract, mix until smooth
In a separate bowl, sift together flour, baking soda, and salt
Gradually add dry ingredients to the wet mixture, stirring until a dough forms
Fold in white chocolate chips until evenly distributed
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart
Flatten each cookie slightly with the back of a spoon
Bake for 10-12 minutes, or until edges are lightly golden
Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
