A fancy and refreshing dessert is peaches poached in Prosecco. Vanilla-infused Prosecco slowly cooks the peaches, giving them a delicate flavor that goes well with their natural sweetness.
Ingredients:
- 4 ripe peaches, halved and pitted
- 1 bottle of Prosecco
- 1/2 cup sugar
- 1 vanilla bean, split and scraped
Instructions:
Put the Prosecco, sugar, and scraped vanilla bean into a large saucepan
On medium heat, bring the mixture to a simmer and stir it around until the sugar is gone
While the liquid is still simmering, add the peach halves
For 10 to 15 minutes, or until the peaches are soft but still have shape, poach them
With a slotted spoon, take the peaches out of the liquid and set them aside
Keep cooking the liquid on low heat until it thickens and becomes syrupy, which should take about 15 to 20 minutes
Add the syrup to the peaches that have been poached, and you can serve them warm or cold
