A classic Chicken Piccata recipe featuring tender chicken breasts in a tangy lemon and caper sauce.
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers, drained
- 2 tablespoons chopped fresh parsley
Instructions:
Season chicken breasts with salt and pepper
Dredge chicken in flour, shaking off excess
Heat olive oil in a large skillet over medium-high heat
Add chicken breasts and cook until golden brown, about 4 minutes per side
Remove and set aside
In the same skillet, melt butter over medium heat
Stir in chicken broth, lemon juice, and capers, scraping up any browned bits from the bottom of the pan
Simmer until sauce thickens slightly, about 5 minutes
Return chicken to skillet and simmer for an additional 2 minutes, until heated through
Garnish with chopped parsley before serving
