These bacon waffles from Cosmopolitan Cornbread are the perfect combination of savory and sweet. The crispy bacon and melted cheddar cheese add a savory twist to the classic waffle, making them a delightful breakfast or brunch treat.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/3 cup vegetable oil
  • 6 slices of bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • Cooking spray for waffle iron

Instructions:

Mix the flour, sugar, baking powder, and salt in a sizable mixing bowl

Beat the eggs in a separate bowl and then whisk in the milk and vegetable oil

Blend thoroughly

Mixing until just combined, pour the wet ingredients into the dry ingredients

Take care not to overmix; a few lumps are acceptable

Mix the shredded cheddar cheese and crumbled bacon into the batter

Waffle irons should be preheated and lightly oiled with cooking spray

Using the amount suggested for the size of waffle iron you own, pour the bacon waffle batter onto the hot waffle iron

Waffles should be cooked until crispy and golden brown, so close the waffle iron

Serve the hot bacon waffles immediately after carefully removing them from the iron
