Ricotta Pasta

There are only two main things you need for this easy but tasty pasta recipe: ricotta cheese and pasta cooking water. When you mix the creamy ricotta with the starchy pasta water, you get a light and creamy sauce that coats the pasta perfectly. This is a quick and easy meal that tastes great.

Ingredients:

  • 300g pasta of your choice
  • 200g ricotta cheese
  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • Fresh parsley, chopped, for garnish optional

Instructions:

Follow the directions on the package to cook the pasta until it is al dente in salted boiling water

Save about a cup of the pasta cooking water before you drain it

Put the cooked pasta and ricotta cheese in a large bowl and mix them together

Slowly add the pasta cooking water that you saved to the mixture until it reaches the consistency you want

The starchy water makes the sauce smooth

To taste, add salt and black pepper

If you want, you can add chopped fresh parsley as a garnish

Enjoy while hot
