Chicken Cornbread Casserole

This Chicken Cornbread Casserole is a delicious way to repurpose leftover chicken into a comforting meal. Its packed with flavorful ingredients like cornbread, cheese, and veggies, making it a satisfying and hearty dish for any occasion.

Ingredients:

  • 2 cups cooked shredded chicken
  • 2 cups crumbled cornbread
  • 1 cup frozen corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced celery
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

Preheat oven to 375F 190C

In a skillet, heat olive oil over medium heat

Saut onion, bell pepper, and celery until softened

In a large bowl, combine cooked chicken, crumbled cornbread, sauted vegetables, corn kernels, cheddar cheese, sour cream, chicken broth, cilantro, garlic powder, chili powder, salt, and pepper

Transfer the mixture into a greased casserole dish

Bake in the preheated oven for 25-30 minutes, or until heated through and golden on top

Serve hot, garnished with additional cilantro if desired
