Vegan Mint Chocolate Dip Popsicles

On hot summer days, these vegan mint chocolate dip popsicles are a tasty and refreshing treat. A rich chocolate dip is served with creamy coconut milk that has been flavored with mint. The two flavors go well together. Theyll be a hit with both vegans and non-vegans whether youre lounging by the pool or having a barbecue in your backyard.

Ingredients:

  • 1 can coconut milk
  • 1/4 cup maple syrup
  • 1/2 teaspoon peppermint extract
  • 1/2 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil

Instructions:

Put peppermint extract, maple syrup, and coconut milk in a blender

Mix until its smooth

Put the mixture into popsicle molds, leaving some room at the top for them to rise

Put a popsicle stick in each mold and freeze them for at least four hours, or until they are solid

In a bowl that can go in the microwave, melt the coconut oil and chocolate chips with 30-second bursts of stirring in between

Take each popsicle out of its mold and dip it into the melted chocolate mix

Put the dipped popsicles on a baking sheet lined with parchment paper

Then, put the sheet back in the freezer for another 10 to 15 minutes to set

Serve and enjoy the chocolate once its set
