This recipe is low in carbs and keto-friendly, and it combines the rich taste of skirt steak with the savory taste of French onion gravy.
Ingredients:
- 2 lbs skirt steak
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1/4 cup dry red wine optional
- 1 tbsp butter or ghee
- 1 tsp xanthan gum for thickening
Instructions:
Preheat broiler to high
Rub skirt steak with olive oil and season with salt and pepper
Place steak on a broiler pan and broil for 4-5 minutes per side for medium-rare or to desired doneness
Remove steak from oven and let rest for 5 minutes before slicing against the grain
Meanwhile, in a skillet over medium heat, saut onions and garlic in butter or ghee until caramelized, about 15-20 minutes
Deglaze the skillet with red wine if using and cook until reduced by half
Stir in beef broth and simmer for 5 minutes
Sprinkle xanthan gum over the gravy and whisk until thickened
