Ingredients:
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1/2 cup sliced pepperoncini peppers
- 1/4 cup chopped fresh cilantro
- Shredded cheese and sour cream for garnish
Instructions:
In a large pot, brown the ground turkey over medium heat
Add diced onion and minced garlic, saut until softened
Stir in tomato paste, chili powder, cumin, paprika, oregano, salt, and pepper
Pour in diced tomatoes, black beans, kidney beans, chicken broth, and sliced pepperoncini peppers
Bring to a simmer, cover, and cook for 20-25 minutes, stirring occasionally
Adjust seasoning to taste and stir in chopped cilantro
Serve hot, garnished with shredded cheese and sour cream
