This cilantro brown rice is a tasty and simple meatless Monday dish that is high in nutrients. Brown rice gets a cool twist from the addition of fresh cilantro and lime juice.
Ingredients:
- 1 cup brown rice
- 2 cups water
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- Salt to taste
Instructions:
Till the water runs clear, rinse the brown rice under cold water
Rinse the rice and add water to a rice cooker
To the rice cooker, add chopped cilantro, lime juice, and salt
Gently mix everything together
Put the lid on the rice cooker and turn it on to cook
To give the flavors time to meld, let the rice cooker sit in the warm setting for an extra five minutes
Before serving, use a fork to fluff the rice
