Creamy Spinach Fettucine

Soothe your soul with a bowl of creamy spinach fettucine that is full of fresh asparagus and peas. This pasta dish is easy to make and tastes great. Its great for a casual Sunday dinner.

Ingredients:

  • 8 oz fettucine pasta
  • 1 cup fresh spinach leaves
  • 1/2 cup asparagus, chopped
  • 1/2 cup peas
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

Follow the directions on the package to cook the fettuccine until it is al dente

Drain the pasta and set it aside

Save 1/4 cup of the pasta water

Melt the butter in a big pan over medium-low heat

For about one minute, until the garlic smells good, add the minced garlic

Chop up the peas and asparagus and add them to the pan

For three to four minutes, until soft

Put in some fresh spinach leaves and cook them until they wilt

Turn down the heat

Put in grated Parmesan cheese and heavy cream

Mix it all together until the cheese melts and the sauce is smooth

Add pepper and salt to taste

When the fettucine is done, add it to the pan and toss it around so that all of the spinach sauce is covered

If the sauce is too thick, add the pasta water that you saved to thin it out

If you want, you can top the hot dish with extra Parmesan cheese
