Light Tofu Manchurian

Savor this protein-rich and light tofu Manchurian, prepared in just 20 minutes. This traditional dish has been given a healthier makeover without sacrificing taste

Ingredients:

  • 400g firm tofu, diced
  • 2 tbsp cornstarch
  • 1/4 cup soy sauce
  • 2 tbsp tomato ketchup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 green bell pepper, diced
  • 2 spring onions, chopped
  • 1 tbsp vegetable oil
  • 1/2 cup water
  • 1 tbsp cornstarch mixed with 2 tbsp water for slurry
  • Salt and pepper to taste
  • Cooked rice or noodles, to serve

Instructions:

Coat diced tofu in cornstarch

In a bowl, mix soy sauce, tomato ketchup, rice vinegar, and sesame oil

Heat vegetable oil in a pan over medium heat

Add minced garlic and ginger, saut until fragrant

Add diced bell pepper and spring onions, stir-fry for a minute

Add coated tofu to the pan, fry until golden brown on all sides

Pour in the soy sauce mixture and water, bring to a simmer

Add cornstarch slurry to thicken the sauce, stirring continuously

Season with salt and pepper to taste

Garnish with additional spring onions, if desired

Serve hot with cooked rice or noodles
