This Vegetarian White Bean Cassoulet is a hearty and flavorful dish perfect for cozy dinners. The slow cooker infuses the beans and vegetables with rich flavors, while the crispy breadcrumbs add a delightful crunch.
Ingredients:
- 2 cans white beans, drained and rinsed
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup vegetable broth
- 1 can diced tomatoes
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tablespoons olive oil
Instructions:
White beans, carrots, celery, onion, garlic, vegetable broth, diced tomatoes, bay leaves, thyme, rosemary, salt, and pepper should all be put in a slow cooker
Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the vegetables are soft
Warm up the olive oil in a small pan over medium-low heat
Add the breadcrumbs and stir them around a lot while cooking until they are golden brown and crispy
Add the toasted breadcrumbs on top of the hot cassoulet before serving
