Creamy Chicken Broccoli and Cheese Soup

This is a rich and comforting soup made with tender chicken, bright broccoli, and creamy cheddar cheese. Great for a cozy night in or getting warm on chilly days.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 3 cups broccoli florets
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 3 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

In a large pot, melt butter over medium heat

Add diced onion, carrots, celery, and garlic

Cook until vegetables are softened

Stir in flour to create a roux

Cook for 2-3 minutes, stirring constantly

Gradually whisk in chicken broth and milk, ensuring no lumps form

Add shredded chicken, broccoli, and season with salt and pepper

Simmer until broccoli is tender

Stir in cheddar cheese and heavy cream until the soup is creamy and smooth

Adjust seasoning if necessary

Serve hot, garnished with chopped fresh parsley
