These Vegan Frozen Drumstick Bites are a delightful twist on the classic ice cream treat, featuring a creamy cashew-coconut base dipped in rich chocolate and crunchy peanuts.
Ingredients:
- 1 cup cashews, soaked overnight
- 1/2 cup coconut cream
- 1/4 cup maple syrup
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup vegan chocolate chips
- 1/4 cup chopped peanuts
Instructions:
In a food processor, blend soaked cashews, coconut cream, maple syrup, cocoa powder, vanilla extract, and salt until smooth
Pour the mixture into an ice cube tray or silicone mold, filling each cavity about halfway
Insert a popsicle stick into each cavity, then freeze until solid, about 4-6 hours
Once frozen, melt the vegan chocolate chips in a microwave-safe bowl in 30-second intervals until smooth
Remove drumstick bites from the mold and dip each one into the melted chocolate, coating evenly
Sprinkle chopped peanuts over the chocolate coating
Return drumstick bites to the freezer and freeze until the chocolate hardens, about 1 hour
