This Paleo Chicken Burrito Bowl is a low-carb, grain-free, and dairy-free alternative to the classic burrito bowl. Packed with protein and healthy vegetables, its a satisfying and nutritious meal for any occasion.
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon avocado oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup cauliflower rice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
Avocado oil should be heated over medium-high heat in a big skillet
Add the chicken pieces to the skillet and cook for 5 to 7 minutes, or until browned and cooked through
Take out and set aside the chicken from the skillet
Add the onion, bell pepper, and cauliflower rice to the same skillet
Add cayenne pepper, chili powder, cumin, paprika, garlic powder, and salt and pepper for seasoning
Simmer the veggies for 5 to 7 minutes, or until they are soft
Add the cooked chicken back to the skillet and mix everything together
Sort the mixture into separate bowls
Add slices of avocado on top, then sprinkle fresh cilantro on top
Lime wedges should be served alongside
