Ingredients:
- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 1 teaspoon olive oil
- Salt and pepper to taste
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
Add salt and pepper to the chicken breasts
Put BBQ sauce and olive oil in a dish that can go in the microwave
Cover the chicken breasts evenly with the sauce mixture as you add them
Put the dish lid on top and heat it on high for 10 minutes, stirring the chicken every five minutes, until its fully cooked
Do the coleslaw while the chicken is cooking
In a bowl, mix the shredded cabbage and carrots together
To make the coleslaw dressing, mix the honey, apple cider vinegar, Dijon mustard, mayonnaise, salt, and pepper in a different bowl
Add the dressing to the cabbage mix and toss it around until its well covered
Let the chicken rest for a few minutes after its done cooking before cutting it up
Put the chicken slices from the BBQ on top of the coleslaw
If you want, add more BBQ sauce as a garnish
