Ingredients:
- 2 cups all-purpose flour
- 1 cup boiling water
- 1/4 cup cold water
- 2 cups finely chopped scallions
- 1/4 cup vegetable oil
- Salt to taste
Instructions:
Put the all-purpose flour and boiling water in a bowl and mix them together
Beat until a rough dough forms
On a floured surface, knead the dough for about 5 minutes, or until it is smooth and springy
Put a damp cloth over it and wait 30 minutes
Cut the dough into 4 equal pieces, and then roll out each piece into a thin rectangle
Use a small amount of cold water to cover each rectangle, and then add chopped scallions and salt on top
Tightly roll up each rectangle, then twist each roll into a coil and tuck the end under
Use a rolling pin to make each coil into a pancake-shaped shape
Put vegetable oil in a pan and heat it over medium-high heat
About three minutes on each side, cook the pancake until it is golden and crispy
Dip it in soy sauce or a dipping sauce and serve it hot
