Paleo Lemon Herb Grilled Chicken

This Paleo Lemon Herb Grilled Chicken recipe is bursting with fresh flavors from lemon, garlic, and herbs. Its perfect for a quick and healthy weeknight dinner or a weekend BBQ with friends and family. Plus, its Paleo-friendly, gluten-free, and dairy-free

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh chopped parsley
  • 1 tablespoon fresh chopped thyme
  • Salt and pepper to taste

Instructions:

In a small bowl, mix together olive oil, minced garlic, lemon juice, lemon zest, chopped parsley, and chopped thyme

Season chicken breasts with salt and pepper

Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them

Massage the marinade into the chicken breasts, ensuring they are evenly coated

Marinate in the refrigerator for at least 30 minutes, or overnight for best flavor

Preheat grill to medium-high heat

Remove chicken breasts from marinade and discard excess marinade

Grill chicken breasts for 6-8 minutes per side, or until internal temperature reaches 165F 75C and juices run clear

Remove from grill and let rest for a few minutes before serving

Serve hot with your favorite side dishes and enjoy
