Mini Spinach Feta Quiche

These Mini Spinach Feta Quiches are perfect for brunch or as a party appetizer. They are packed with flavor from the spinach, feta cheese, and Parmesan, and the nutmeg adds a delightful aroma. Plus, their mini size makes them easy to serve and enjoy

Ingredients:

  • 200g spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 4 eggs
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil
  • 1/4 cup diced onion

Instructions:

Preheat oven to 375F 190C

Heat olive oil in a skillet over medium heat

Add diced onion and cook until softened

Add chopped spinach to the skillet and cook until wilted

Remove from heat and let cool

In a bowl, whisk together eggs, heavy cream, grated Parmesan cheese, salt, pepper, and nutmeg

Stir in crumbled feta cheese and cooked spinach mixture

Pour the mixture into greased mini tart pans or a muffin tin

Bake in the preheated oven for 20-25 minutes or until set and slightly golden

Let cool for a few minutes before serving
