Ingredients:
- 200g spinach, chopped
- 1/2 cup crumbled feta cheese
- 4 eggs
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
- 1/4 cup diced onion
Instructions:
Preheat oven to 375F 190C
Heat olive oil in a skillet over medium heat
Add diced onion and cook until softened
Add chopped spinach to the skillet and cook until wilted
Remove from heat and let cool
In a bowl, whisk together eggs, heavy cream, grated Parmesan cheese, salt, pepper, and nutmeg
Stir in crumbled feta cheese and cooked spinach mixture
Pour the mixture into greased mini tart pans or a muffin tin
Bake in the preheated oven for 20-25 minutes or until set and slightly golden
