Ingredients:
- 1 cup black rice
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup toasted almonds, chopped
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions:
Run cold water over the black rice several times to clean it
Bring 2 cups of water to a boil in a medium-sized saucepan
Turn the heat down to low, add the rinsed black rice, cover, and let it simmer for 30 to 35 minutes, or until the rice is soft and the water is absorbed
Take the rice off the heat and let it cool all the way down
Put the black rice that has been cooked, the cucumber, cherry tomatoes, red onion, cilantro, mint, feta cheese, and toasted almonds in a large bowl
Take a different small bowl and mix the olive oil and balsamic vinegar with a whisk
This will make the dressing
Pour the dressing over the salad and gently toss everything together
Add salt and pepper to the salad as needed
Put the salad in the fridge for at least 30 minutes before you serve it
If you want, you can add more mint leaves as a garnish
